Colorado Beef Council Promotes Beef Nutrition During Beef Month

May 8, 2026

May is officially Beef Month, and the Colorado Beef Council is using the opportunity to highlight beef’s nutritional benefits while expanding outreach efforts across the Centennial State.

Kate Schulz, consulting registered dietitian with the Colorado Beef Council, says the organization is promoting beef through social media campaigns, burger challenges, and nutrition education efforts throughout the month.

“In Colorado, we do consider every month to be Beef Month,” Schulz said. “But specifically this month we’re doing some fun things around social media promoting beef and a burger challenge.”

Schulz says one of the key focuses this year is showcasing how lean beef fits into healthy eating patterns—especially as May is also recognized as Mediterranean Diet Month.

“I always love to be able to showcase and highlight how beef can fit into any healthy eating pattern,” she explained.

Schulz says checkoff-funded research continues to help reinforce beef’s nutritional value and its role in heart-healthy diets.

“It’s fun to be able to have the research… because of the checkoff… to showcase how lean beef can fit into that Mediterranean-style eating pattern,” Schulz said. “Lean beef can have the same heart health benefits or cardiometabolic benefits as other protein sources.”

The Colorado Beef Council is also working to connect with younger consumers through partnerships with schools and student-athlete programs across the state.

One major initiative is its partnership with CHSAA, the Colorado High School Activities Association, helping provide sports nutrition education to students, coaches, and parents.

“We looked at it as an opportunity to really be able to have reach throughout the entire state,” Schulz said. “Not only supporting student athletes throughout Colorado, but also providing a really valuable educational resource.”

That program includes the “Sports Nutrition Game Plan,” developed with support from the Texas Beef Council.

“Even though it has sports nutrition in the name, I think it’s a wonderful foundation for eating for any teenager,” Schulz added.

Schulz says the overall goal remains clear: continue building beef demand while helping consumers better understand beef’s role in healthy lifestyles.
